Bohnen-Paprika-Salat

Zutaten:

1 Bund Petersilie
1 kleine Dose Mais
1 Knoblauchzehe
2 rote Paprikaschoten
500 g grüne Bohnen

Zubereitungszeit:

ca. 30 Minuten

Zubereitung:

Die Bohnen putzen und halbieren. Den Mais abtropfen lassen. Die Paprika waschen und in Streifen schneiden. Den Knoblauch abziehen und mit einer Knoblauchpresse durchpressen. Die Petersilie waschen, trocken schütteln und fein hacken. In einem kleinen Topf Salzwasser aufstellen und die Bohnen bissfest kochen. Anschließend abgießen und erkalten lassen. Danach die Bohnen mit Mais, Paprika und Petersilie vermengen.

Tipp: Wer auf ein Joghurt-Dressing nicht verzichten kann, kann eine Kleinigkeit darüber träufeln. Ansonsten empfiehlt sich ein hochwertiges Olivenöl und etwas Säure in Form von Limetten-/Zitronensaft oder Essig.
